Want to Save the Earth? Go VEGAN!

For those of us who regard ourselves as “earth conscious,” I have a few really terrific meal ideas to boost your support of a healthy earth and a healthy YOU.

Let me begin by stating, I am a VEGAN, however I do believe in eating meat from animals ONLY when the animals are raised HUMANELY, unchained, unrestricted and are allowed to live freely out in nature and eat only what they would naturally. With those parameters, my meat-eating days are very few and far between. And if you’re thinking vegetarianism is enough, let’s remember that cheese, milk, ice cream are all from an animal who is also living a suffering existence…I know how your “body craves dairy…” but please know there are myriad non-dairy versions of your favorites –which you may now enjoy without the REAL guilt!

I recently gave up eating eggs as well, just to know I can do something good for those who I feel, are enslaved. There are a few excellent farms on the West coast who raise the bar for care of their Chickens, Hens and Roosters. Even so, this Summer I decided to put a lot of variety into my diet and let myself discover new tastes and new healing! PLANT POWER!

During the recent COVID-19 outbreak, we learned that these viruses are naturally occurring in animals and when the animals are put into stressful situations –forced into small, dirty confined spaces, often injured and scared, these conditions are ripe for viruses to spread from animals to humans.

Buying vegan now is sooooo easy! Many great brands are available at your local grocer as well as most national chains. My first recipe is a classic updated for simplicity and health (and Earth support)! Take a look, try it out, BE DELIGHTED!

 “Meatless” Gringo Tacos 

Serves 4-5

These remind me a bit of the tacos we had at home when I was a kid; you too may remember them using the “Lawrys” taco seasoning packet with hard yellow-corn shells. Here I pay homage to those, of course adding many more fresh additions giving this a boost in nutritional value (and taste!) A su gusto!

Ingredients/Taco Grounds:

  • 1 package Gardien “Meatless” Grounds 
  • 1-2 Tbs Taco seasonings * (or 1 packet trader joe’s taco mix or your favorite)
  • 1/2 cup red onion, sliced thin or green onion
  • 1-2 cloves garlic, chopped or minced
  • 1/2 Avocado
  • Purple cabbage
  • 1 cup Kale
  • 1/2 cup Cilantro or mint or parsley
  • Lime
  • 1 can black beans
  • Vegan cheese shreds
  • 2-3 Tbs filtered water
  • 1-3 Tbs avocado oil or other high smoke-point oil
  • Corn Tortillas* 
  • *NOTE: see below for semi-home made oven-baked crispy shells

Ingredients/Taco Sauce:

  • 2 Tbs Veganaise (vegan mayo)
  • 1/8 cup Lime juice
  • 1/8 tsp Maple syrup
  • 1/2 small Avocado 
  • Salt + Black Pepper to taste

Ingredients/Taco Seasoning:

  • 1/2 tbs Cumin
  • 1 tbs Chilli powder
  • 1/2 tps onion powder
  • 1/4 tps garlic powder
  • 1/2 tps oregano
  • 1/4 tps red pepper flakes
  • 1 tps black or pink pepper
  • 1/4 tps salt
  • Pinch cayenne (as needed for extra heat + great digestion stimulator!)
  • *NOTE: store in air-tight jar up to 6 months.
  • Use about 1-2 Tbs or to taste


Thinly slice purple cabbage into strips and cut in half (to shorten their length)

Thinly slice red onion into strips and cut in half (or green onion cut into thin-med circles)

Chop or mince garlic clove

Slice avocado into thin strips or cube them 

Drain black beans (after opening can)

Wash then chop kale into thin strips (TIP: squeeze lemon juice over + massage to soften a bit)

Heat up your skillet (always love the cast-iron)

  *NOTE: you may add up to a tablespoon oil here if you feel you need it to move the grounds; 

I feel that the moisture from the frozen grounds provides enough “slip” and we will add a bit of water to incorporate the seasonings while mixing to avoid things sticking

Over medium heat add meatless grounds to skillet and stir about a minute

Sprinkle 2-3 tbs water over grounds then sprinkle-on taco seasonings, mix well

Turn down heat to low, mix, cook about 5-7 minutes total

Prepare Taco Shells:

  • Pre-heat oven to 350 degrees
  • With a pastry brush, coat tortilla shells on both sides with oil
  • Place shells on cookie sheet and  put into oven 
  • Bake about 5-7 minutes
  • Remove from oven and lightly “fold” shells; *turn OFF OVEN
  • Replace into oven about 3 minutes *OVEN IS OFF
  • Remove from oven and let cool

Prepare Taco Sauce:

  • In a small bowl, add veganaise, lime juice, maple syrup and avocado slices
  • Using a large fork, mash avocado into liquids until creamy texture
  • Add salt + pepper to taste 

Now that everything is complete, dress your taco with grounds, red onions, purple cabbage, green cilantro/mint/parsley, avocado and black beans, finally topping off with drizzles of your tangy fresh taco sauce. Enjoy this bright, beautiful healthy meal!

  • Golden oak shiitake mushrooms
  • Corn torillas*

CHOOSE to Feel Good

Most mornings I awaken to Cat Meows to prepare their 4am breakfast (raw, species-appropriate) At first this annoyed the crap outta Me. Then I realised how HAPPY I am to be “CatMum” to 3 amazing Souls (in Cat form) and how much JOY I FEEL in their warm furry presence.

For Me, this is a wonderful way to participate in UNCONDITIONAL LOVE. This practice has strengthened My UL muscles where I can choose to LOVE without condition; to LOVE beyond the form/person/situation in front of me; rather, seeing the Perfect Soul inside the form.

So every morning i CHOOSE TO FEEL GOOD —and YES there are definitely mornings when I really have to say to myself: Choose IT! Basically, i LOOK FOR MORE WAYS TO FEEL GOOD! My relationships have improved, my HEALTH has improved + my overall outlook has improved. Even my close friends see the difference in me, even better, they FEEL the difference 

Tomorrow Morning ask yourself: How Do I Want To FEEL today?

Here are a few ways to practice Feeling Good:

  1. Find 10 positive aspects about your current situation (Abraham-Hicks)
  2. Focus on a memory that makes you laugh
  3. Write down your core values –this will be your “home base”
  4. Add fragrant fresh flowers to your living room or office

These are just a few things I personally use to snap me into a good mood. Now this is not a means to push-away your troubles, just a way to guide you to taking charge of your How You Feel so that you can manage your mood; when you’re in a better mood, your options are better, your choices increase and your outlook is elevated.
